Lots of remarkable dishes! - Edit
I had the vegan version of the standard dinner and really enjoyed all the dishes. Choix uses a lot of rare and unusual ingredients, and creates unique flavors!

Amazing food, great atmosphere, loved the juices - Edit
Came here with close to 20 colleagues and we all had a great time. I was the only one on a plant based diet, and was very well catered to by the stuff. One of the juices I got served had bee pollen, but that was changed immediately. So great!
Read moreAll dishes had great flavor profiles, the juices working very well with all of them, ingredients were prepared amazing, and it all looked marvelous.
The pics I added are some a colleague of mine made, and at least one of those dishes is not vegan. Thing is: you can't tell, because they don't leave out ingredients (like other lazy restaurants do), but properly replace it with something that tastes and/or looks similar

was treated to a lovely meal here! enjoying cooking myself, i tend to appreciate food the most when it's not only something i wouldn't be able to make myself - but something i wouldn't even imagine as possible! and choux did exactly that:) i specified ahead of time that i was vegan, and compared to the non-vegan meals, i did not feel like they were cutting corners for their vegan dishes at all !! would definitely come again, as the menu changes with the season 🌱❤️ staff was very friendly but professional as well:)

They make their own juices. We don’t know if the wine they serve is vegan.
It’s quite expensive, but worth it. Good products, huge kitchenstaff, friendly service.

Still an excellent restaurant to go to when you have something to celebrate. Note: one of the juices was made with honey, but we heard that beforehand and got to choose an alternative.

Fantastic Vegan Menu - Edit
Choux is a very popular fine dining restaurant. It’s not a vegan , but they offer a fantastic vegan menu. I went for the 5 course. Every dish spectacular. A very good option when your companions are not vegan but everyone wants to eat well. Also great home made non alcoholic drinks. Wine menu also very good. #Veganuary

Normally tempeh, an Indonesian fermented soybean cake is made of, yes. Soybeans. But in my preferred Amsterdam restaurant Choux a tempeh mad of buckwheat was served. Judged from the taste they had perfectly used the fungus Rhizopus oligosporus to make their tempeh. Choux, due the Corona pandemic we had not visited it for a long time. And hurrah, it is still excellent and affordable and with a very friendly staff. Vegetarian or vegan: be welcome. We enjoyed our super 4 course vegetarian dinner (€ 59.50), creatively prepared with excellent ingredients, and their fine wines and unusual Nevel beer (Wild Ale from the Nevel Brewery in Nijmegen, NL). And, on top, it is at a 10 minutes’ walk, eastbound, from Amsterdam Central station. Make a reservation in advance.

I am a small person but I still had to eat lots of bead to fill myself up and this is the reason why I give 4 stars rather than 5 that the food actually deserves.
Unfortunately, in the early evening only that menu is available.
Next time I will book a later spot to experience the full 6 course menu and... No more bread :)
Remember that this restaurant serves meat, so make sure that you specify that you want a vegan menu at time of booking.
Pros: Superb vegan food, Good wines, Friendly staff and atmosphere
