They had two vegan burgers, 2 omelets, and a hash option. I loved their fajitas omelet. Friendly waitstaff on John.

Great Option in Beachside Town - Edit
Just looking at this place and walking in you wouldn't think they'd have any vegan options. Then you look at their menu and find a ton of different options. One reviewer said they only had two options but if I remember correctly there were many options so maybe they updated their menu. I was skeptical that they used real meat and eggs because the way the place looked and the food they served regularly, but then you see how many different options they had for vegans on the menu and it becomes apparent they know what they're familiar with vegan. I'd recommend specifying twice that "everything should be vegan" because the JustEgg + Beyond Meat can be hard to differentiate from real animal products. It's a great option for vegans in Corpus Christi

Came to Chop & Eggs while in Corpus. Omni restaurant, but they offered a vegan omelet and vegan hash. Went with the hash which had Impossible meat and a side of Just scrambled eggs. Absolutely delicious!

Waited about 5 mins to be seated got sat in a super crowded area. The server was great besides that the kitchen did mess up on my order so it took an hr to come out I was super hungry but the food was definitely worth it

i got the planet hash for breakfast on saturday! the service was a little slow but it was a saturday morning so it was busy. nonetheless, having vegan options that aren’t straight vegetables was so awesome. i got the planet hash and the portion was huge! great vegan eggs and vegan meat :)

Best Vegan Breakfast EVER - Edit
Two choices for a vegan omelette! The Impossible Beef version was outstanding in my 20 year history as a vegan diner. The chefs know their business. A fluffy, browned Just Egg omelette with the perfect ratio of veggies to "egg ," actually browned, seasoned, well presented....I cannot emphasize how much more delicious this was than ANY vegan breakfast I've had in decades. Bravo!

The place can get a little crowded, it seems like it’s almost always bustling with people. The servers are super kind and are always making sure tables are open and clean, there were at least 4-5 vegan options from what I could see on the menu; I ordered the vegan planet hash and it was the best thing I’ve ever had. Everything was prepared wonderfully and this is a place I’ll always visit when in the area; it’s a pretty far distance but well worth it in my opinion. The dish also comes with a side of fruit (not mixed but whatever the kitchen has; when I went it was watermelon). 10/10 will be coming back again!!

I ordered the vegan hash after reading another review here on it. Omg! I even double checked that it was for sure all vegan. They seasoned the faux meat so wonderfully. I couldn’t even finish it all! Excellent!

I was impressed with how big the vegan omelette and vegan hash skillet were! The omelette was the more flavorful of the two dishes, but both were very filling. The server knew what vegan meant, so that’s always a plus. I’d go back.
