Quick & tasty Mexican fast casual - Edit
The vegan options at Chipotle are plentiful. 67% of the ingredients you can choose from are vegan to be exact. Just stay away from the usual things like meats, sour cream and cheese. The fajita veggies have a designated cooking space with a metal divider separating it from where they cook the meats, so there is no cross contamination. The Sofritas is heated in a large bag by itself, and not on a shared grill or fryer, so it is vegan.

Flavor-wise, Chipotle is at the top of my list for Mexican fast casual. I think there is a higher quality taste and overall flavor profile than other similar restaurants in the area.
This is a good location (Rosemount). The restaurant is kept clean, it is fully staffed (which has been an issue at other Chipotle locations), and you can get your meal in under 10 minutes even during peak hours.
