Serves meat, vegan options available. Mexican fast food chain founded 1993 in the US and now operates outlets across North America and several more overseas. Set up is assembly line style where you could customize your order of tacos, burrito, or burrito bowl, and request no cheese or sour cream. Offers a savory sofritas filling that's made from soy protein, and some locations offer Impossible meat. Rice, beans, guacamole are vegan. In early-2019 added a pre-configured vegan bowl which includes the sofritas in addition to other fillings like guacamole. Open Mon-Fri 11:00am-10:00pm, Sat-Sun 12:00pm-8:00pm.

Good

It's your typical Chipotle. You have to watch them or you could end up with cheese or sour cream in your guacamole and/or red sauce. Aside from that, the food was very good every time I went.

Pretty good

Chipotle is pretty good, there are so many different types of plant foods put into one bowl so I think it's very nutritious besides the oil used. I love getting the veggie bowl because, instead of sofritas, you get guac no extra charge. It's plenty flavorful without the sofritas even though it's pretty good too:)

Pros: Fast service, Large portions

Good for a chain restaurant

I prefer local restaurants but there are scant few in Pueblo that are vegetarian friendly so I have settled for a few acceptable chains. Chipotle offers better options than most. You can select a veggie options as your filling for any entree or if you need some protein you can order the sofritas filling. (Sofritas is an organic, seasoned, spicy tofu.)
