Good for a chain restaurant - Edit
I prefer local restaurants but there are scant few in Pueblo that are vegetarian friendly so I have settled for a few acceptable chains. Chipotle offers better options than most. You can select a veggie options as your filling for any entree or if you need some protein you can order the sofritas filling. (Sofritas is an organic, seasoned, spicy tofu.)
