Offers a savory sofritas filling that's made from soy protein, and some locations offer Impossible meat. Rice, beans, guacamole are vegan. In early-2019 added a pre-configured vegan bowl which includes the sofritas in addition to other fillings like guacamole. Open Mon-Sun 11:00am-10:00pm. Open daily.

Great vegan option, not great about cross contamination - Edit
Like every Chipotle location, they provide a filling and satisfying vegan option (vegetarian as well) with lots of different vegan salsas (you can ask for extras!). They’re not great about ensuring things don’t spill into the other containers, so if that bothers you this might not be the best choice.
