Burrito for Two - Edit
Not entirely vegan. Try the sofrita burrito with guacamole. It's big enough for two, or leftovers for lunch the next day.

Organic Guacamole and Soyfritos - Edit
Chipotle's shining moment in history was when they introduced soyfritas to the world. Hallelujah! The tofu is GMO free (i.e. Monsanto has no business here). The Guacamole is organic and excellent. For a place that sells meat, Chipotle are taking a few steps in the right direction by not participating in the hideous intensive farming industry.
You build your own burritos, bowls, tacos etc (like at subway) so you can avoid meat and dairy very easily and there are beans and soyfritas (yay!) for us vegans and vegetarians. Soyfritas is spicy scrambled tofu. I love it so much I make it at home. Recipes are online. Give it a try.
Pros: Organic produce where possible, Cheap, Soyfritas!
