Very confusing/concerning experience. Beware! - Edit
Updated review as of 10/1/23:
Read moreI have gone back a couple of times over the past couple of months after hearing from friends that they were informed of vegan options. The first time, i was told that the mongolian sauce was not vegan so they custom made sweet and sour seita , which was quite good. Every time after, I have spoken with staff who seemed visibly more confident in the menu and expressed that the mongolian seitan was, in fact, vegan. I think it your experience depends on the staff, because some are quite well versed in their menu and mentioned a few items being vegan as is, like the Mongolian seitan (which was really good). Provided that they are telling the truth, I would try them again! Either way, I will always clarify when I am there and let them know by vegan i mean no animal products including fish sauce, shrimp paste, animal broth etc. just because of the variance in what the staff reports. But the food is great. I would give this a higher rating if there weren't so many conflicting experiences.
Original 1 star review:
I came here very excited to try their vegan options, however was informed that due to the sauce none of the dishes can be made vegan and the vegetable egg rolls are not vegan because the paper contains egg. I was told the only thing I can eat would be steamed vegetables. However, I don't think the staff was sure what vegan was as she said they put seafood in the hoisin and soy sauces (and at one point also said you never know what they put in the sauces), but when I asked if it can be removed she said it was pre-made? She asked if I was a strict vegan many times and corrected another staff member who said the mapo tofu was vegan, as she said it also contained seafood. However, she also refused to go ask the kitchen if things could be removed.
The concerning part: I mentioned that their website states that anything can be made vegan or vegetarian and the response I received was "yeah but every restaurant says that now." Yikes!

Pros: Menu sounds good (didn't get to try ant food), The tea was good
Cons: Apparently no customization is doable?, Potential false advertising?, Refusal to go back and ask to the kitchen

I had a similar experience, met with confusion and seemingly lack of vegan options due to sauces. I left without eating there. Would love to know if they do in fact have vegan options as I would go back to try them.

Not sure if I can update this review or not, but I did decide recently to try again (if so i will update it). Great spot - Edit
Thanks to this site and the reviews I found a new local spot for Chinese food😄I ordered the Mongolian seitan based on reviews and it was very good! The seitan is more like the chickn texture I am used to, but it is very good. My non-veg husband tasted the dish and really liked it. I will be back to try the other vegan friendly dishes, including tofu ones!

Delicious hidden treasure - Edit
Chef Bo's is a wonderful Chinese restaurant with two excellent seitan dishes (Mongolian Seitan and Salt & Pepper Seitan, both vegan) as well as many vegetarian dishes which are vegan (16/18 items in the Vegetarian section are vegan - anything without the word "egg" uses vegan tofu and the dish is entirely vegan, which I have confirmed with management). Plus, their vegetable egg rolls are vegan!

Cons: only meat substitute is seitan, no vegan fried rice

They have seitan! - Edit
Awesome vegan options. The sesame tofu and Mongolian seitan are my go to. The fried rice (without egg) is also really good.

Mongolian Seitan is worth the 20+ minute drive - Edit
Because of HappyCow I tried their Mongolian seitan /I get it whenever I’m in the area and sometimes I make the long drive to get it and I don’t usually do that for anything else right now. I also enjoyed their vegetable lo mein.

Favorite Chinese Restaurant! - Edit
I love Chef Bo’s Green Garden restaurant. The seitan dish is amazing. It is full of seitan in a delicious sauce. Huge portions. There are a large variety of tofu dishes as well which we have enjoyed but since it’s so hard to find seitan Chinese food I usually go for that. We’ve never eaten there and get take out and we’ve never been disappointed. We drive out of our way for this place!
