Cheap and easy but delicious food - Edit
We came across the food stall when wandering over the market in the morning. When you enter the market from the southern side, it's in the first row of stalls, just before you enter the big hall with all the vegetables and fruits (There you can get fresh deep fried bananas and sweet potatoes btw.).
We had two different kinds of soups, each 15.000dong. They seemed vegan to me and were quite good. I don't know the opening hours but I guess they will close by noon, as a lot of markets do.
