Lots of vegan options! - Edit
The Busy Bee - The Busy Bee serves Traditional American Fare and World Cuisine with a fresh and modern twist. Several vegan or veganizable things on the menu. They'll substitute tofu for the meat on any of their salads and will make a tofu scramble version of their egg breakfast dishes if you ask. Andrea, who's usually at the counter is a vegetarian, she'll look out for you.
Global Cafe - a fusion of Afro, Caribbean, and Latin Cuisines. Ask for the vegan plate.
The Corner Cupboard - Very veg-friendly, I think there's always a vegan or vegetarian special that can be made vegan on the board. If you're not sure, just ask.
JR's Fresh Cut Fries - No cross-contamination! Fries are cooked in separate oil than meats
Roburrito's - vegan potato burritos with great guac and a variety of hot sauces
SUSHI BY JOONY - last time I checked the selection was only vegetable rolls and seaweed salad.
Zanelli's - not sure of the details, but they're veg-friendly and have Daiya at their Dover location - possibly at Market too now.
Aladdin’s Gyros - felafel wraps!
Korean Style BBQ Cup - the tofu bowl is vegan w/o the sriracha mayo, you can get it with straight sriracha too
Simply Soup - they usually have at least one vegan soup every day.
There are several excellent produce vendors (Dietz Produce is the place to go for organic!) a soap maker, and
Pros: Lots of choices in one spot., Convenient downtown location, Beautiful historic building
Cons: Open 3 days a week, Vendors tend to shut down around 1:30 or 2PM, Butchers and delis with lots of meat on display

Generic Review - Edit
A market is a market. You know fruits and veggies are sold at a market. Meats are sold here and very prevalent. The odor of cooking meats are detectable. Individual vendors within the market have reviews on Happy Cow. ie) Bair's Chicken and The Busy Bee. I would refer to reviews of those places which have the same address as "Central Market".
Pros: Fresh fruit and veggies, Veg options offerd at some eateries
Cons: No exclusive veg*n eateries, Parking, Smells of flesh foods
