Great Find in An Bang - Edit
Absolutely loved this place. Staff is extremely friendly and accommodating.
I really enjoyed their smoothies, fruit plate and fresh juices as well as the spring rolls. Favorite was the baked Eggplant which is a large plate and comes with rice for only 40,000.
Pros: Vegan-Friendly, Moderate Prices, Great Staff

Big portions, vegetarian friendly - Edit
Cay Me has 2 locations of the same name on the same street. It does cost a bit more than the typical vege spot in Hoi An but their portions are much bigger. You will walk away feeling full. I absolutely love their Banh xeo chay and Papaya salad! If you order vegan or vegetarian, please make it clear you want no meat or animal products. They also make a lot of great meat dishes so they will not assume you want a certain dish make with just veggies. With that said, I love this place, I'm here all the time and would recommend.
Pros: big portions

Friendly, good quality food - Edit
Cay Me has made an effort to put a lot of interesting vegetarian dishes on the menu, and advertises "vegetarian food" on their lit-up sign on the main road near a cluster of hotels.
The restaurant has indoor seating and some outdoor seating under pretty shelters next to the quiet road.
The staff were all friendly and chatted to us about our trip, and seemed genuinely interested in making our meal enjoyable, how to appeal to vegetarian customers etc. They were happy to leave out milk and eggs from dishes where necessary.
We loved the fresh spring rolls with satay sauce and crispy tofu.
It is more expensive than the local chay cafes in town - around 100k dong for mains, but if you are staying in this area you save on taxi fares into town by eating here!
Pros: Many veg*an options, Very friendly
Cons: Serves meat
