Surprisingly many vegan options! - Edit
This is not your typical Italian restaurant. It has a very extensive menu with some unusual options and their vegan range is surprisingly big, see photos. The service has always been very good and whenever I can't go to a veg restaurant in Ingolstadt, Castello is a very good alternative. Calling ahead is advisable even though they have a lot of tables, inside and outside.
Pros: lots of vegan options, they understand what vegan means, reasonably priced
Cons: not entirely vegan
