Carlisle Thai Cuisine needs a reboot. The food quality has decreased. The family that owns the restaurant is very nice and friendly. They have a personal touch and remember their longtime customers. They have a lot going for them, so I'm confused as to why the food quality has gone down so much.
And, only a few dishes can be made vegan. I don't know what the other reviewers are talking about. The last time that I was there, I got a smoked tofu dish with mixed vegetables, and it was swimming in oil! I was able to pour at least 1/4 cup of oil off my meal onto a fresh plate! They have some non-Thai waitstaff who are friendly and professional. However, their hygiene seems questionable.
It is a shame because I really like the owners and hope they continue. Some improvements must be made if they decide to continue on.

I don't know if the food is terribly authentic, but it is a great option for vegan takeout if you live in Carlisle.
I was afraid I might start collecting social security before our food came. Admittedly, the server was on his own, but there were only 3 tables in the place when we ordered. Still took him 10 minutes to come around and take our order and 45 to get our food. Anyway, here's the breakdown:
Food: a generous 2/10 only because it was hot and vegan
Authenticity: 0/10 didn't even resemble Thai food. Looked like a Thai restaurant, but the food misses the mark by a long shot.
Service: 5/10 b/c the server was nice. Not his fault the kitchen staff was super slow and they were under-staffed.
Atmosphere: 2/10 sleepy music, low lights. A total snoozefest.
Conclusion, if I had the chance to go here or starve, I'd have to think about it.

Cons: Drunken noodles was seasoned with black pepper onl, Painfully slow kitchen. , 5 people perished while waiting for their food.
