Many vegetarian and vegan options - delicious food - Edit
Very good Mexican food in a hole-in the wall restaurant next to Walmart.
Read moreEven had a whole Vegetarian section.
Just about anything could be made vegan.

Surprise find while traveling between Nashville and Knoxville - Edit
Really enthusiastic and attentive staff! We were going to settle for Taco Bell (next door) while driving from Nashville to Knoxville, but I walked in to check if Cancun had anything vegetarian and what a surprise! Not only do they have veg items, but they even have a “Vegetarian Combos” section on their menu. Staff was so encouraging and welcoming to vegetarians, that I ran out to bring my husband inside quickly. Very tasty. They even let me add sautéed veggies to my platter. They have a second location about 1 mile away at 1282 N. Main Street also in Crossville, Tennessee.

Pros: Lots of vegetarian options. Can make w/o cheese, Fajitas, burritos, enchiladas, tacos, tortas, etc, Traditional flavors, home style, fresh, fast. A+
Cons: We ate way too much. Huge portions
