Hotel Dining - Edit
Update to my review of a few years ago. At the time of my current stay, vegan options at breakfast are oatmeal (hold the milk) and berries. Dinner, vegan menu is gone. Too bad; the setting is still fabulous.

I was a guest at the hotel. Particularly when tourists clog the highways (30 minutes to travel three miles), it is easy to feel like it just isn't worth the drive or walk. Your choice is made. Things could be worse. This is a beautiful setting, and staff/management try to be accommodating. You will need to ask what's veg*n, and some things that look like they can be altered cannot. So go for the view and bring reasonable expectations. You'll be fine.
Update: dinner menu has one item, plus plant-based tasting menu. It smelled very fish-y; I lost my appetite and left.

Great option for a special night - Edit
We were pleasantly surprised by this place. The plant-based tasting menu was creative and delicious! Lots of great flavors and beautiful presentations. And lots of real plant foods, no processed concoctions. You can tell the chef knows what they're doing here - I almost felt bad for the other guests eating the usual steaks and seafood, they were missing out.

Had an amazing dinner here. The plant based tasting menu was just incredible! The combination of flavours was often unusual (second course was beets & berries with almond cheese) but worked very well. The four dishes were very filling. The dessert of sweet potato tart with burnt marshmallow creme was the best thing I've EVER eaten!

Not the cheapest meal but given the quality of food, preparation and the ambience it was totally worth it.
Fantastic place to come to celebrate a special occasion.
Pros: Amazing food. Great setting on Carmel coast.

The Best Fine Dining - Edit
This place is CLASSY. The wait staff make you feel like royalty, the view is unbeatable, and the vegan tasting menu was amazing. I did the tasting menu with wine pairing and it was probably the best meal I have ever had. It's all veggie-centered, using a lot of interesting/non-traditional veggies prepared perfectly. I highly recommend for a fancy night out or date night with an omni partner.
