Serves meat, vegan options available. Chain of quick service restaurants in the Pacific Northwest. Offers bowls, sandwiches, salads, wraps, breakfast; has tempeh and tofu. Great Airport Option - Edit
If you're stuck at PDX, there aren't that many options. Mod Pizza is ok, but Yumm has decent options. I got one of the Yumm bowls with edamame, nori, beans, and quinoa, and substituted avocado for the dairy. It was great and not that expensive (for airport food).
Pros: Decent vegan options, Whole plant options
Cons: Serves meat and dairy
