Serves meat, vegan options available. Cafeteria style eatery in the university offering vegetarian items on the steam tray. It's the only place like it on the campus. You can put together a plate with salads, steamed vegetable, stir frys, rice and beans, potatos, fruit, and a drink. Costs around 18-20 Quetzales for a plate (under US$3).

Better than Pupusas! - Edit
If you hang out on the USAC campus enough and you're vegetarian, than you know the only thing you can really eat when you want a meal is pupusas (frijo or queso) and french fries. But I was stoked when I found this place! It's a really good bang for your buck and you get lots of veggies! And their rice and beans are really tasty and they don't use lard or meat in them.
Pros: cheap, lots of veggies, variety
Cons: hard to understand the owner's Spanish
