Limited options- good donuts - Edit
Cute little shop in Little Tokyo with very limited seating. They have labeled donuts (2 total when I was there: coconut/chocolate and pb&j). None of their ample other pastries are vegan. But the donuts were very good - light/fluffy and good flavor. They have salad - none by default vegan but easy to veganize by leaving off cheese and getting the vinaigrette dressing. The salad I tried was very good with fresh greens, apples, and avocado. They have coffees and teas with plant milks available for an up charge.

Some Veg Options - Edit
Cafe Dulce is a cute shop in Japanese Village Plaza. They offer oat and almond milk. When I asked if the matcha was vegan, the employee hesitated but clarified it did not have honey or dairy. The matcha was pretty sweet and had a mute “matcha” flavor. For context, my boyfriend, who normally dislikes matcha, loved it. But it was still a nice treat while walking around. They might have a few vegan donuts, but I did not see any. Not the most veg-friendly, but an option while inside the plaza.
