This is a local vegan franchise. A hawker stall selling only one dish, a vegan bun xao chay. Basically dry noodles with tofu and some vegetables and soy sauce. Open Mon-Sat 6:00am-11:00am. Closed Sun.

So many of these scattered around Saigon

This is a franchise. I've lost count how many I've spotted around Saigon. I think I've put a few on Google Maps and HappyCow so far. Probably more to come.
They sell only one dish, a Vietnamese dry breakfast noodle meal called bun xao chay. Basically noodles with tofu, a fried wonton and some veggies. As of March 2025 it is only 15.000.
If you walk around some of the busier streets early in the morning then you are highly likely to see one of these street food stalls.
Each one has the same signage, same ingredients and same take away boxes with the same printed details on them.
