Saigon has an abundance of this breakfast noodle dish. Everywhere you go in Saigon there is nearby a stall selling this vegan dish in the mornings. This one is a typical stall. The bun mi xao chay is basically noodles, tofu, a spring roll, a wonton, veggies and soy sauce.
