I found some bananas, nothing else vegan to take with me and eat on the train.

Best in the Station By Far - Edit

This is a high-quality supermarket which is great for grabbing something to take on the train. They offer salad bowls, specialty bread rolls, packaged snacks like falafel if you don't mind eating that cold, crisps and fruit. Also sells alcohol. If you have more time to spare, there is a small coffee bar inside too.

Pros: selection, long opening hours

Cons: busy, quite expensive

Nice bread and salads - Edit

If you're passing by the Copenhagen Central Station, and only have a short stop, to find some food, MAD Cooperativet, in the corner of the building, is an excellent choice. They have a salad menu, and you can choose one from there, and easily omit or add things you wish. Beware of the dressing, as they (when I last visited) are pre-made, and doesn't have a list of ingredients.

While you are there, you can also pick up some fresh bread from the bakery section. My suggestion would be getting the Ølandshvede rolls with cranberries. Delicious!
