Vegan sandwiches cold and hot - Edit
When I was there the vegan sandwiches were both available, cold with hummus and roasted veggies, hot with falafel. Prices are typical airport prices but still one third of the prices of Exki. The sandwich was good.

2 vegan donuts🍩 - Edit
If you are just looking for something sweet, they have 2 vegan donuts: the plain one and the speculoos one.

I tried the speculoos one and it was really good.
To find Panos: it's at the beginning of gates A, right after the security check and the duty free area.

Only one option - Edit
There was only one vegan option and it was falafel and mango chutney baguette. It was dry and lacked taste. Service wasn’t that good either but at thi airport this was the best I could find.
