Make the walk - Edit
We walked from old town to here and it was worth it. The place is clean with soft music. Seating for about 18 people. Service was fast and pleasant. We had the menu of day consisting of a soup, main plate and drink. Main plate was rice, a small salad, lentils and soya/seitan. A good size meal and tasty, with that homemade touch. We had two menus and one piece of cake and it came to $8.50

Best food in Ecuador - Edit
This was by far the best food we ate I'm Ecuador, the resturant is a little out of the centre but 100% worth the effort. $3.50USD almuerzo for a decent portion. The owner was lovely and mostrando importantly the food tasted great.

A 3$ menu comprising a really good soup and a varied plate. A glass of juice or soy milk in included. It is a vegetarian place but the menu was vegan (ask though). Dessert is not included nor vegan, at least when I went.

Nice vegetarian place in Latacunga - Edit
For 3$ set up menu I've got soup, nice second plate and glass of soya milk. The meal was very tasty and although it seemed like the portion could be bigger it turned out to be just perfect.

Decent Lunch Menu - Edit
Went for their set lunch menu and had a good broth soup to start and then a mixed plate with beans, rice, some veggies and soy meat, as well as a juice. That was $3. We also tried their burger for $2.50 and it was actually pretty good! More like a falafel. They had lots of other pho-meat options but that is all we tried.

This is the only vegetarian restaurant in Latacunga and they definitely don't let that shake them. The dishes do vary a bit in shine, but if you get a good menu del día, you're going to be ecstatic.

This place has the best carne de soya that I've had at any restaurant. I'm not a big fan of meat replacements, but this one was seriously great. They offer traditional Ecuadorian dishes that are suffering-free and really delicious. The soy empanadas are absolutely killer.
I met with the owner and they're planning a remodel of the place which will make it look and feel a bit more like a cafe, which will be a great move for them. It's currently a little dreary in there, so some fresh paint and a mural two and they've got themselves a really hip little joint.
Also, the owner is more than happy to accommodate vegans and the majority of their dishes are vegan in the first place, but some include cheese (baked milanesa, for example).

Simple, but tasty - Edit
Brocolini is to find as both Maps.Me and Google Maps have accurate position. It has tasty and cheap "menu" for lunch ($3 at time of review ), as well as tasty soy meat empanadas, and hamburgers. All vegan on the day I was there. Its clean, seats about 20, and has relaxed music playing.
