Good; Not Great - Edit
Miso Veg Ramen is their vegan ramen option (waiter said that the “Creamy Veg Ramen” is not vegan). Broth in the vegan option was super satisfying with flavors of miso and ginger. Not much to it flavor-wise other than that since the noodles, corn skewers, spinach, scallions, and bean sprouts weren’t super flavorful. The shishito pepper appetizer was really good!

Vegan option Longmont location - Edit
I went to the Longmont location which isn’t listed here yet. I got the veggie ramen which they made vegan (no egg) and the tofu appetizer. Both were amazing. The tofu was delicately seasoned and flavorful. The ramen was rich, as spicy as you want, with complex textures and flavors. Would highly recommend.

Oodles of noodles - Edit
My husband and I stopped in for the first time last week. The line of people waiting for tables was to the door and I'm glad we waited. The best vegan ramen I have had in a long time. I ordered one spicy and one mild and I could definitely go for extra spicy next time.
