A couple vegan options but slow service - Edit
We went here for lunch. There are only a couple of vegan options, one of which was a veggie burrito.
The restaurant is tiny and not able to serve multiple tables at once. We had to wait for two other tables to get their food before we even got our drinks. The drinks came after 1/2 hour, and the food right after. The burrito was quite tasty, with veggies, lots of fresh lettuce, and a nice sauce.
It wasn't our best meal in Copan, but it was far from the worst and it was a great value. If they'd brought our drinks sooner, I'd have rated them higher.

Good food, vegans require customization - Edit
Nothing really appears vegan on the menu from first glance, but a little customization will provide a lot of options.
The "desayuno typical" (typical breakfast) includes ham, cheese, and eggs, but you can skip these and get extra fruit, avocados, and extra beans. NOTE: the spanish menu and english menu do not always list the same things. The ham is NOT mentioned on the english menu.
The vegetarian burrito, minus cheese, is also a good option for vegans. If you can re-think eggs as putting avocados on your plate, a lot of options open up on the menu.
This is next to the Hostel Don Moises, and I ate here for breakfast daily. Delicious. The employees are also SUPER friendly.
