Filling, yummy vegan options - Edit
Offers vegan burrito, bagel sandwich, quiche, and vegan milks for coffee. The burrito and bagel sandwich were delicious! Melty cheese, beyond patty, and just egg. Everything came hot and toasted. All the veggies were properly cooked through. Overall a very satisfying vegan breakfast.

Friendly Owner/Staff - Edit
Everyone at Bluebird is very nice and welcoming. In fact, the owner asked for suggestions of future vegan options to add to the menu. They have a veggie avocado toast as well as a Just Egg breakfast sandwich. Alt milks available. Very nice and affirming vibe.

I so appreciate they had more than just avocado toast as the vegan breakfast option. I had the breakfast bagel with just egg, vegan cheese, and vegan sausage. The bagel seemed store bought and would have been better freshly made or from a bakery

The Bluebird Cafe has intentional plant-based (vegan) items on the menu - no substitutions or omissions required! The owner is friendly and requested suggestions. The cafe is bright and supports diversity in its clientele. Highly recommended!

Food is absolutely delicious, fresh and fairly quick. Various options for beverages and food (vegan and not vegan) and I was super impressed with the vegan menu. I got the vegan bagel sandwich with vegan eggs, cheese, sausage, avocado and tomato and it was amazing!
Read moreService is excellent, the new owner Bishop is so friendly and kind, and seems very interested in expanding the vegan menu (he was asking me questions about the best vegan brands, etc) Other employees seem happy, even singing along to the music.
Atmosphere is lovely, lots of tables and comfortable places to sit. Music is pleasant.

Went for breakfast and the only option was avocado toast with some tomato and cucumber. Avocado wasn’t seasoned at all, two thin slices of each veggie weren’t enough for the one piece of toast. Really great atmosphere and right in the middle of town - just wish they’d do more than the absolute bare minimum for vegetarians/vegans.

Although this restaurant isn’t fully vegan, they have 1 vegan sandwich (the sopris sunshine) that is vegan and many others that can be made vegan, including a cuban that can be made with jackfruit. They also have breakfast options and tons of drinks (coffees, teas, smoothies, etc.) with different milk options.
