My company had Blue Mesa cater their holiday lunch. I had never heard of it, and I tried to stick with what looked reasonably veggie and not think too much on it. I had the Ginger Rice, Smoky Black Beans, Blue Corn Cheese Enchilada, and Corn Cake. It was all very delicious! What prompted me to research this was as I was eating the beans the next day, I was trying to pinpoint the flavor, and I thought surely, these must be made with smoked ham or bacon or something to get this type of flavor. I went to the site to see if I could possibly see any ingredients, and come to find out that the beans are actually vegetarian, as is many things. If you go to the Nutritional Info page on their site, it tells you what items are vegetarian and what can be made vegan. Great flavor all around! LOOOOOVE the ginger rice!
