Gastronomic experience - Edit
Omnivore gastronomic restaurant but they cater to every dietary need if you just tell when booking. I’ve been there twice now and twice the vegan experience was just perfect! They cook only local products (no coffee at the end by chicory;)) and the vegan dish were clearly thought of (not just leaving something out of a dish) and it was always tasteful, creative and impressive. You can pair your degustation with either alcoholic beverage (some are home made) or non alcoholic (all homemade). I would really recommend going there for a special occasion, as with every restaurant of this standing it is pricey.

Everything is cooked with local ingredient only (no chocolate, no coffee, etc.).
Everything (besides alcohol) is 100 % homemade (oil, sirup, etc.).
Even if the plates clearly lacked some proteins, I feel like it’s more an experiment on discovering new veg, new tastes, new way of cooking.
It was AMAZING.
We took the non-alcoholic pairing where all the drinks are homemade and made just for the plate. I highly recommend that instead of the alcoholic one.
Also : major bonus for staff who is just sooo nice and the best 😍
