it's a shame, not a restaurant. - Edit
There's a small salad bar with cut tomatoes, 2 types of greens and steamed brocoli. There is also quinoa, but iа you take it, they will aks you to pay more than the price they told you a first. you may add some salt and olive oil, but they don't have spices.
It must be a place where people believe that healthy means tastless.

no longer vegetarian - Edit
just to let you know i went to this restaurant on 3/5/2012 to find that they served 'pollo' (chicken). The owner explained that the mains were vegetarian, but some sides contained meat.

Avoid if you're vegan - Edit
Came here as a result of there appearing to be no other remotely vegan options in Salta. There were only three menu options available the day we went: two of them were lasagne and one was an egg in a pepper or something. I asked if there was anything vegan and the waiter offered me a plate of vegetables! It's possible to negotiate a shitty boring meal anywhere in South America but when going to a vegetarian restaurant I expect some thought to have gone into a meal! I never ate here (we left pretty quickly after that in favour of yet another cheeseless pizza) so I can't comment on the food, but from the other reviews it sounds like a place to avoid.
Cons: no vegan options, unhelpful staff

Not vegan-friendly... - Edit
This restaurant is weird and we didn't feel very welcomed. It was empty and almost sinister... In the entrance, some dishes were arranged on a buffet, but without lid or something to cover them, not very hygienic. And it was only some raw vegetables and rice dishes, not very appetizing... We asked if they had something else. The don't know what "vegan" means, and they had nothing else that theit austere buffet, except bread with cheese and some other dishes made with cheese or dairy... Not very vegan-friendly. And if I want rice and raw vegetables, i can cook them by myself...
Cons: Poor choice, Nothing vegan, poor welcome

Simple healthy food - Edit
There were a few lunch specials, all involving their homemade vegetable soy burgers. For $13 Argentinian Pesos ($3.45 USD) each, we ordered a burger and had unlimited access to the salad bar. The salad bar included carrots, cucumbers, greens, string beans, eggplant, tomatoes, beets and quinoa. There wasn't any seasoning, which made the salad rather bland but still healthy and refreshing.
We thought we'd ordered one burger each but ended up with four in total. It was a surprise to see how they were served, all alone without a bun or dressings. If we were vegetarian, they would have happily been served with cheese. We ended up mixing them with our salad. We took the extra two burgers home for dinner.
The burgers had a nice texture but tasted a bit weird. I think the "off" taste was a result of the oil they used. There's this awful oil in South America, a blend of grape seed and olive oil. The taste of the oil wasn't overwhelming but it was strong enough to make it difficult to enjoy the burger.
Bios Diet is a small place, perfect for lunch and takeout. The prices are reasonable and the food is healthy. They have an English menu and friendly staff.
Pros: cheap, healthy
Cons: bland, boring

it's okay - Edit
This place is okay but a little bland. Cheap and good service makes it worth visiting. also worth supporting one of the 2 veggie resterants in town.

High quality - Edit
We really enjoyed our meal at this little place - spinach and brown rice pie(not sure, but I think it was probably vegan) with buffet salads for AR$14. They had a few different types of pies and similar things, and you could buy the pie on it's own to have there or take away for AR$8.
Pros: tasty, cheap, healthy
