Works with pay per weight system buffet, with one side being vegetarian/vegan and offering vegetable dishes and soy protein/tofu dishes. Offers vegan versions of typical Brazilian recipes like feijoada, which consists of black beans with vegetables and tofu accompanying cateto type rice, chopped kale and farofa (cassava flour with spices).
