Not a lot of vegan options but the ones they have are delicious. - Edit
Vegan options clearly marked on the menu and staff is also knowledgeable. I had 2 vegan banchan, broccolini and fruita. Tempura relleno entree and shave ice dessert. All with complex and delicious flavors.

Small, veg heavy, tasty - Edit
Small plates that are straight veg like broccolini and carrots. Not a super filling meal, and pretty pricey, but I must admit it was well prepared and very flavorful. Server was great.

Quality food. Bad vegan experience. - Edit
I scoured the menu and couldn’t find several of the options that other reviewers mentioned. Asked the server if the vegan bbq was my only vegan option and he gave an unequivocal yes, and it was just by luck my friend happened to order to eggplant schnitzel which I had just been reading a happy cow review of (Jfc I hate QR code menus).

A house salad that has cotija as an ingredient is listed as vegan straight up.
How was the eggplant schnitzel? Well, I’m a sucker for perfectly cooked eggplant and it certainly was, paired with a very good sauce. Altogether the dish is a tad on the watery or umami-craving side, and you may still (as I did) feel fairly hungry without an appetizer. I was STARVING when I arrived and it’s hard to express how sad I was to have zero noodle or rice options.
Two entrees and two appetizers are vegan, but all of them are vegetable only with no starch or protein. Several options mentioned by other people seem to be part of the prix fixe or are at least not readily available.
A vegetarian reviewer mentions the kimchi fried rice but no fried rice is listed as vegetarian.

Items on menu are clearly marked as vegan or vegetarian. I (vegetarian) got the cucumber cocktail which was very good. my favorite dishes were the fried rice, broccoli, sprouts, veggie noodles and the street corn was to die for. Everything we tried was amazing though, these are just the highlights. Had the sticky toffee for dessert and left with a creamsicle slushier to go. Both great as well.

Vegan Prix Fixe, SO GOOD! - Edit
They offer a vegan prix fixe menu of all the vegan options ($59 at time of posting). 3 vegan banchan (sprouts, spinach, and broccoli), miso squash, street corn, veggie fried rice, and eggplant schnitzel. All of the dishes were incredible, good textures. Miso squash was a standout, but I’d order any of it again (I could take or leave the banchan, but it was nice to have as an accompaniment). Number of options were limited, but it is truly some of the best vegan food I’ve had on the strip.

Good Vegan Options - Edit
Has about 5-6 vegan options, the eggplant schnitzel is great! Staff are knowledgeable on the vegan items. Worth a visit in Vegas. it can get really busy and even though they have a host they don't really sit you down they just tell you to find your own table and wait to be served, Service can be slow.
