I did build your own tacos and there’s a decent amount of variety. The chips & salsa are really good too. We did the trio as an app and I found the gauc and pico were incredibly limey so we honestly didn’t eat them which was disappointing.

Read moreI got the el vagano box, which came with two tacos, tortilla chips, and guacamole (salsa is an option too). It was fine but not very memorable, I just ate it a few days ago and can't remember anything about the taco besides it was soggy and fell apart.
Sounds like the customize your own taco route is the way to go due to other reviews.

This place isn’t exactly authentically Mexican but the food is fresh and tastes good. There are a lot of options to customize your taco or bowl, with several vegan protein options and lots of clearly-marked toppings. I got a bowl and tried a bunch of the protein options and they were all good. I imagine they make good individual tacos!
Read moreIt was a bummer that disposable plates and cutlery were used though, and if you put too many items together the tastes kinda meld into one. My drink was also just ok.
Overall a good option especially if you don’t have a ton of time. I like the hybrid system where you have table service but write your order down, which kept things quick. I never go crazy for assembly-line or fast-casual places, but as far as that model goes this is probably near the top of the pack.

I've been several times since they've opened and haven't gotten tired of the build your own taco menu. Every single item on the menu is LABELED! Don't have to ask what's vegan!! There is a singular vegan option on the "specials" menu, El Vegano, which I haven't tried as I'm not a fan of mushrooms.
Read morePrices are a little odd as you are allowed one free protein, but rice and beans count as a protein also on top of tofu or mushrooms, and are $1 extra each if you get more than the one. i.e. a tofu, rice, and bean taco is $3.75 (base) $2 (extra plant protein). All other toppings are no extra cost including their extensive salsa menu which is nice.
Huge drink menu, and free chips and salsa if you stick to their house made roja salsa! Any other salsa, it's like $5. Salsa always tastes fresh. Be advised they raise their drink prices quite a bit during October (not unusual in Salem).
In my opinion, the best tex mex/Mexican option in Salem right now for vegans.

Cons: Weird pricing on proteins & chips and salsa
