This is mostly vegetarian; there is only one meat dish and everything else is vegetarian, which can easily be vegan if you omit the egg. This town is known for their bibimpap, which is different be of the rice and grains they use. Also instead of gochijang they use a soy-sauce based sauce, which enhances the flavor of the rice, instead of overpowering it.
Some of the banchan was vegan at the start of summer. There is summer kimchi, peppers in a bean paste sauce and a salad with sesame sauce and red pepper flakes.
