Found this stall when I was fed up with mock meat and other veg buffet. It's more like a kind of street food. The veg banh tam consists of rice noodles, pickles, some fried veggies and vermicelli, veg spring roll, coconut milk and sauce. It was a bit salty for my liking and I wish there were a but more coconut milk (which can be asked) but generally, it was lovely and kind of the best thing I had in Chau Doc. One bowl cost 20k. Since I asked for one more spring roll, it cost 25k in total. CHAY is the word for vegetarian/vegan I'm Vietnamese. Just point that if you are veggies
