Love this place! - Edit
Vegetarian options are hard to come by in Delaware, Bahn Mi Boy is a great go to when I'm in Newark. It's priced right, the sandwiches are delicious, and the owner and all of the people who work their are really nice. A while ago they added a couple more vegetarian sandwiches, I believe it was a lemongrass tofu and a mock pork, but I still love the OG the best. Definitely the way to go if you are in town.
