We had Tofu Salad Rolls and Coconut Shredded Tofu. Very good! Has a separate vegan section of the menu.

Great Vegan Pho! - Edit
This place is worth the drive to Salmon Creek, they serve a tasty vegan pho and have a lot of other vegan choices (try the yummy and spicy Saigon rolls). You order at the counter and then they bring you your food at your self-selected table. The pho is a good sized portion but other choices might be a smaller portion than you are used to. You won't leave hungry but you probably won't take home leftovers either.
Pros: Vegan Pho!, Friendly service, Clean and comfortable space
Cons: Not completely vegan, In a shopping center, Out of the way
