Different and delicious take on Mexican cuisine - Edit
Perhaps the previous reviewer failed to ask for vegan cheese on their dishes first. Different from the Mexican food we see in restaurants in Colorado and most of the US, but really good. One of us had the Enchiladas Rojas, and I had the Tacos Varioados Vegetarianos - one Nopal (Prickly Pear cactus pads), one Cuitlacoche (also known as "Huitlacoche" in Mexico or "Corn [censored]" in the southeast US - a corn fungus), and one Flor de Calabaza (squash blossom). All wonderful. The owner served us, and is an enthusiastic and entertaining character.

Not vegan at all - Edit

When we opened the menu we only saw two options that didn't have a meat or dairy icon next to them. We asked the waitress to make sure "are these the only things that don't have meat and cheese?" She said yes and repeated "no cheese".
We ordered both options to share and two margaritas. A moment later a different waitress comes up to us and tells us that those dishes do infact contain cheese.
Me: so why no milk icon?
Her: 🤷♀️
Apparently we could have ordered them without cheese, but I asked if they would still be good and her reply was a slightly disgusted expression that said she wouldn't recommend it. We canceled the entire order and left.
We are way beyond the times of taking things out if our dish to make it vegen, ending up with half of what you're paying for. Especially in major cities.
A vegan option should be one that the sheff put thought and effort into to combine the right tastes etc, just like any other dish.

Vegan cheese isn’t listed as a menu option, but they do have it if you ask! We got the enchiladas rojas (con nopales) and the vegetarian burrito. Both were incredibly delicious and filling.

Delicious, has vegan cheese - Edit
Ordered the red enchiladas, asked the waitress for no cheese and she offered me vegan cheese and also asked if I wanted no sour cream which was great as this wasn’t listed on the menu. Full vegetarian section in the menu and everything can be made vegan by asking for vegan cheese and no sour cream. Went back a second time and had the burrito which was very tasty and very big.

Simple and yummy Mexican food - Edit
They offer vegetarian burritos, quesadillas, fajitas and tacos, all of which can be veganized. We ordered some vegan tacos and they were delicious. Recommended!
