Lovely place, lots of solid options! - Edit
It’s not so easy to find vegan options on La ruta and this place really delivered! The choripan was really tasty, especially loved the pesto sauce. They also offered a burger, bolognese, soup and more!

Unexpected plant-based oasis - Edit
Not a day has gone by where I haven’t thought about Axul’s tomato soup, a marvel of freshness that puts tomatoes at the forefront, using curry powder and coconut milk to make them even stronger. Their vegan menu is ample, and their coffee is high quality. I had the choripan (such fresh bread, excellent pesto, delightful vegan sausage). My only two quibbles are with food issues that can be easily resolved — the tomato soup is vegan but comes with buttered rolls (weird), and they make their iced americano with sugar as the default. Why ruin it?!
Read moreI was so impressed to find such a cute and eclectic spot in Concepción de Ataca. They have great art on display, and I loved seeing the looms. The greenery is so luscious, so verdant; it was unforgettable.

Cute cafe with lots of options for vegans! - Edit
Stopped in with a mixed group of vegans, flexitarians, and picky omni eaters. Everyone enjoyed their food and drinks and the atmosphere in the beautiful garden setting. There was also an artisan shop and you can see their looms in action too! We got the vegan choripan and the cielo verde drink and it was all delicious! This has got to be the best place for vegans in the area.

A great find for vegans on la ruta - Edit
Axul was an unexpected surprise in such a small town. Vegan options are clearly marked and there are several interesting options (not just salad!) The food was really delicious: we ordered a choripán (vegan sausage topped with chimichurri and mayo) and a burger with a substantial bean patty. Both came with crunchy potatoes. The coffee is excellent too and they have oat milk!
