Refreshing multinational oasis in lovely Uppsala - Edit

Read moreI was so happy to see that Uppsala also had fully vegan places when visiting on a beautiful summer day-trip.
I wanted to try the Anbesit Delight ("a little bit of everything" kind of dish),
but since they were out of shiro, I went for a “Kitfo outta here” instead — 169 SEK.
Described as: Beyond meat, spinach, and creamy feta cheese, tossed in rich qibe. Served with injera or warm pita bread.
You can sit down to eat and cool off at the chill area with benches and parasols in the middle of the food trucks, or take your food to the lush and lovely park Stadsträdgården with its little fish ponds, right next to the food trucks.
The dish was good. Personally, I would have added some condiment to it, but I perfectly understand this is a traditional dish.
One thing that stood out a little bit was that I didn't notice any visible signs saying vegan or plant-based on the truck. Which made me walk past it at first.
I'd love it to be more proudly vegan.
On the other hand, I also do understand the challenges of clearly promoting vegan food to a population that, in a vast majority, isn't vegan (sadly).
So I'm sending you all my love and support for doing the right thing! :)
Was it worth a visit? Absolutely.
It’s always a joy to experience food cultures from around the world!
And Uppsala is such a charming, beautiful, and lagom sized city!

All vegan spicy food - Edit
Love to find a all vegan food truck. My dish (the potato stew) was sadly a bit boring with no greens. It was also small for the quiet high price. My friends dish was bigger and worth the price.

The dishes were very tasty and the portions were generous. The "mix of everything" dish was my favourite, it was a bit spicy but I enjoyed it. You can have as much bread as you like, and the person working there was really lovely.

The "mix of everything" dish it's amazing 😍, and they can give you as much bread as you need. Definitely a must try. If the weather is good, go for it!

The person working here was so friendly and the food was amazing! We ordered the Kitfo Outta Here! and Mix of Everything, and she even told us we could go get more injeras in case we needed it :)

Delicious Ethiopian food! Will be coming back again! - Edit
I only found out yesterday that this foodtruck on the Uppsala Matmarknad is fully vegan, and even after confirming with the owner on Instagram, I had to go visit it immediately the day after. There were so many good options, so I had no idea what to pick, so I went with "A Mix of Everything"!
Read moreThe portion was quite large, so I couldn't finish it, but my boyfriend ate the rest and really enjoyed it too! My favorite of the mix was the shiro with the delicious injera I think! But the spiced beyond meat was so delicious also and I was so pleasantly surprised about all the flavors!
We enjoy visiting this food market once in a while, and now I know that I have "safe" options available and they are delicious too. I will be back for sure, because I want to try the 4kilo club sandwich, and the sambusa!
