An Binh
Tiny com chay eatery with a small yellow sign out on front. Go through a 'gate-house' down an alley and then it's an open room on the left later. You get a plate with rice and different sides, whatever the kitchen cooks that day. On the 1st and 15th of lunar month it offers all-you-can-eat buffet. Open Mon-Sun 10:30am-9:00pm.

Worth a try - Edit
An Binh is very difficult to find. We asked a local and were shown the alleyway. There was no sign outside and nothing to indicate there was a restaurant back there. The restaurant is about 20 metres down the winding alleyway.
We arrived at lunchtime and it was crazy busy. There is a large help yourself table on the corner but it's cut-throat. Without owner intervention people take entire plates full of one item (the best one). The result is that the unpopular dishes pile up so if you arrive at an unlucky moment, that's all you'll have to eat.
Most of these eateries in Vietnam are heavy on mock meats. An Binh is not to their credit. Most of the plates contain real vegetables. That said, the vegetables were not what I would consider a good standard compared to other street food in Vietnam.
I wanted to give An Binh a second chance but other places nearby were just too tempting when I was hungry so I never went back.
Pros: different experience, very local
Cons: impossible to find without help, no system so you have to be a little aggressive to
