Good Indian Takeaway - Edit
It's always exciting to try a new Indian spot especially when it's the perfect take-away option to enjoy at home. Ambrosia popped up on our nearby with solid ratings so I was very excited to call in and enjoy some spicy Indian takeout.
Read moreAfter our meal, I'd say that this spot was good but not necessarily our favorite. They have a dedicated vegan menu which I appreciated and there is plenty around for the meat eaters.
I tried their Vegan Aloo Baingan Masala ($12). Each comes in the small soup container size for reference. The ABM was pretty good however and I'm glad I clarified with them what ingredients they used to prepare this dish. If you have a coconut allergy, this is a good option for you since it does not contain any coconut based products.
Coupled with a vegan paratha and I was pretty set. Placing the order was very easy and they had our food ready in about 30 minutes. Overall, the meal was good but it didn't blow me away to the point where I'd return immediately. It gets the job done.

Plenty of delicious vegan options! - Edit
It was super delicious! Went during lunch buffet time. Plenty of vegan options. The dinner menu has a lot more vegan options. Staff are very knowledgeable about veganism and are very accommodating. They even gave me a take home vegan pocket menu. Also you get a free drink (alcoholic included) during lunch buffet hours. Also lunch buffet was only about $15.

Ambrosia India Bistro is Vegan friendly - Edit
I'm a vegan who moved to Aptos recently and live near this restaurant. On my first visit I merely stopped by to check it out while on a walk. They have the Happy Cow sign on the front door. I went in to inquire more and was warmly received and given a pocket size menu. I returned a couple weeks later with a non vegan cousin and we had a wonderful meal. Our waiter was very knowledgeable of the menu and able to answer all my questions, even about the free dips and naan. The menu is clearly marked what is vegan and not and there are many vegan options. I had the vegan vegetable vindaloo. Even my lamb eating cousin liked it, as there's plenty portions for more than one person. I've been back for take out since and got the Chana masala, delicious!
