Veg-friendly & Awesome food & wonderful people - Edit
If you are looking for a place to stay in Loja, Ecuador, then consider Akemy Hosteria. Not only the hotel is designed beautifully with Japanese/Asian characteristics, but the food is also great! It was the first time that they made vegan food, so the owner, Chef Saul, personally custom-made delicious vegan food (sushi, salad, soup, rice/beans) for us. Surprisingly, the vegan sushi was the best that we ever had in a very long time! The food also had a taste of Japanese-Ecuadorean fusion, ie. mango sushi, miso-bean soup. Most importantly, Saul and his staff were extremely friendly and helpful to us. Overall, we are very happy with our experiences there and got to make new Ecuadorean friends!
