Good food, but misleading menu. - Edit
First, the warning - the items called "vegetarian" on the menu have fish sauce in a few ingredients.
Read moreThe good news is that the menu marks vegan ingredients and it is very easy to make a few minor substitutions. The staff was helpful and knowledgeable, so it is not awkward to get it all sorted.
My kid and I both had ramen. It was very good. The build-your-own poke bowl looks like a good option and the ingredients are all fresh. The food came out quickly.
In all, this is a great option for Mankato. I live in MN and will almost certainly be back whenever I am passing through the area.

Great vegan poke options - Edit
We tried the two options on the menu and enjoyed them both.

They have tofu options veggie rolls, and tofu sushi burritos.
The vegetarian bowl includes tofu, edamame, cucumber, mango, kimchi, avocado, and seaweed salad with sesame dressing, seeds, and shredded nori on top.
The vegetarian ramen includes veggie broth, spinach, kikurage mushroom, bamboo shoots, corn, scallions, fried tofu, and kimchi
Pros: good to have a few options, filling
