    Bring a pasta pot and small pot of water to a boil.
    Peel and cut vegetables. Smash garlic
    Fill sink with 5 inches of ice cold water. Put a bowl in the sink for the cooked vegetables. The water would not touch the vegetables.
    Once pasta water is boiled, salt the water. Cook pasta to directions. Remove and rinse under cold water.
    Once small pot of water has boiled, add lemon, garlic, Italian spices, salt, and pepper.
    Blanch each of the vegetables separately in the water for 1 minute each. Then place in the bowl in the sink.
    Mix together white vinegar, lemon juice, Italian spices, salt, pepper to taste.
    Toss together pasta, vegetables, and vinegarette.
    Chill in fridge for 20 minutes before serving.


    3/4 cup peas
    10 asparagus
    1 small zucchini
    1 small yellow squash
    1/2 small broccoli head
    12 oz pasta
    1 clove garlic
    1/2 lemon
    Italian spices, salt, and pepper to taste
    1/2c white vinegar
    1/2 lemon juiced
    Italian spices
    salt and pepper to taste
