Blueberry Pancakes

Ingredients:

130 g flour
1/2 teaspoon salt
1 tablespoon vegetable oil
1 tablespoon baking powder
175 ml plant milk
1 large banana
360 g blueberries
vegan butter

Instructions:

Mix all the dry ingredients together in a bowl.

Add the oil and milk.

On a chopping board squash the banana with the back of a fork and add to the mixture. If the mixture is still quite thick, add a dash more milk.

Add half of the blueberries.

Place a frying pan on medium heat and add a small bit of vegan butter.

Once melted pour a small amount of mixture into the pan. The mixture should keep its shape; once the top starts to bubble, flip over.

Once all pancakes are made, cover with maple syrup and the remaining blueberries.

Number Servings: 5
