Basmati Rice with Cucumber Curry

Ingredients:

1/2 cup basmati rice
1 cucumber
shredded coconut
curry powder
turmeric
cumin
goji berries
olive oil

Instructions:

Wash and peel cucumber, then cut into small cubes.

Warm up slightly olive oil onto frying pan. Add cucumber, berries, curry, and coconut.

After few minutes add a little bit of water if content is too dry. Cover with lid. Cook for 5 to 8 minutes on a very low heat.

Meanwhile wash rice, and leave on a strainer.

Boil 1.5 cup of water with pinch of turmeric and cumin.

Add rice, stir. Cover and cook on low heat about 12 to 15 minutes.

When all is ready, combine all together. Add a little bit of fresh olive oil and serve.

Number Servings: 2
