Ingredients1/2 tablespoon Veganaise (vegan mayonaise)
1 1/4 teaspoon carrot juice
2 tablespoon vegetable broth
1 tablespoon vegan margarine
1 1/4 teaspoon arrowroot or cornstarch
Optional dash of sea salt or kala namak (Indian black salt)
InstructionsMix all ingredients except for salt in a small saucepan. Slowly heat on low to low-medium heat, constantly stirring, until you get the same consistency of yolk.
When done, sprinkle the sea salt or kala namak (optional).
This goes well with sliced tofu, lightly fried on both sides, with your favorite seasonings.
For a more authentic look, cut the tofu in a circle, with a hole in the middle for the yolk.
Others ways to enjoy this is as a vegan version of the loco moco Hawaiian dish, or "bacon/egg/cheese" sandwich.
