Simple Seitan

1 cup wheat gluten
1 packet onion soup mix
2 tablespoon nutritional yeast
1 tablespoon smoked paprika
1 tablespoon granulated onion
1 teaspoon granulated garlic
1 teaspoon salt
1/2 teaspoon Italian herbs

3/4 cup vegetable broth
2 tablespoon Bragg's Amino
1 tablespoon veg Worcestershire sauce

Combine dry ingredients.

In an separate bowl, combine wet ingredients then add to the dry mixture.

Mix with hands, kneading the dough until evenly moist and springy. Takes only a few seconds.

Shape into a thick slab and cut lengthwise into strips and then crosswise into cubes about the size of a thumbnail.

Place into a simmering (never boil as it changes the texture) broth of 1 cup vegetable broth and 1 cup water. Simmer for about 45 minutes. Add water if necessary.

Now you have delicious cooked seitan, ready for any recipe.

It's a good source of protein and also an alternative for tofu. I like it, because it tastes a little bit like mead.
