2 cup coconut milk
1½ cup dates, pitted
½ cup coconut oil
1 orange, extract the juice and grate the rind
1 cup unbleached flour, sifted
2 cup whole wheat pastry flour, sifted
1 tablespoon non-aluminum baking powder
½ cup coconut flakespinch sea salt
InstructionsCombine coconut milk and dates in a saucepan. Simmer until dates are very soft. Place dates and coconut mixture in a blender; add oil, grated orange rind and juice and puree until smooth. Combine dry ingredients into a bowl. Pour liquid ingredients into dry and mix until well coated. The batter will be thick. Spoon batter into oiled baking dish. Bake at 350F degrees for 35-45 minutes, until firm and golden. Spread cake with coconut spread, or garnish with coconut flakes, chopped walnuts or almonds.
