Reasons why I prefer to eat vegetarian or vegan:
For the animals, for the planet, and for my own health. It is a beautiful, compassionate way to live, and for me, being vegan is a spiritual practice.
I joined HappyCow Members Community because:
I have used the Happy Cow app for years to find veg-friendly restaurants and stores, especially when on the road. It's time for me to give back!
Here are some places I've been that I liked... and places that I would like to visit one day:
I've enjoyed every place I have visited. Favorites include my current home, Wilmington, NC; Tucson, AZ; Taos, NM; Asheville, NC; and Boulder, CO. I'd love to do a veg tour of Italy! Bora Bora is also on my list of must-see places.
Some of my favorite veg*n foods include:
For me, it's all about the sauce! I enjoy roasted veggies with dipping sauce, Thai cuisine, and Indian food. And fermented foods - I make my own sauerkraut, and I plan to try kimchi next. I'm also learning to make vegan cheeses, thanks to Miyoko Schinner and Chef Skye Michael Conroy.
