I am a vegan college student. I am going to be studying abroad for an academic year in Guanajuato, Mexico! I would love to hear some stories about how it is to be vegan in Mexico. Does anyone have any tips? Any go to vegan mexican food items? Thanks!
Also, does anyone know anything about sugar used in Mexico? Is using bone char a part of the refining process like it is in a lot of sugar from the U.S.?

Rice and beans are a-plenty. Fresh veg is also a staple. I will advise you not to really cast your net too wide. Get to know a few restaurants who know you are vegan and are happy to accommodate you. Build a rapport and frequent an establishment. If you visit often enough they may even create specials just for you which are not part of their regular menu. A good chef will do handstands for you - and there are plenty of great chefs in Mexico.
